Our Story
We believe Idaho potatoes deserve to be more than a side dish. That's why we created Papa Loca, turning Idaho's favorite crop into unforgettable meals.
Born in Idaho.
Inspired by Tradition.
Raised in Idaho Falls, we grew up surrounded by Idaho's greatest ingredient: potatoes. We also grew up in a Hispanic family where food meant gathering around the table, sharing stories, and making sure no one ever left hungry.
When it came time to build something of our own, we wanted it to reflect both parts of who we are.
Papa Loca grew from Idaho agriculture and the bold flavors of our family's Mexican heritage. We take Idaho's famous potatoes and transform them into loaded baked potatoes, crispy fries, sweet potato creations, and refreshing aguas frescas. Every order is made fresh and served with the same hospitality we grew up with.
Whether we're parked on a street corner, serving lunch to the community, or feeding hundreds of guests at weddings, festivals, corporate events, and private celebrations, our goal is simple: create food that brings people together and leaves a lasting impression.
